Starting the New Year Off Right with Sunday Brunch, Sans Bacon, Sadly

I thought I would kick off the new year right (and nurse my *slight* hangover) with a nice wholesome breakfast!  Unfortunately, I didn't have any bacon-- or the foresight to buy bacon for this very occasion-- but it would have been a welcome addition. The menu below will make enough for two.

First things first.  COFFEE.  Philz opened a new location in downtown PA and my friends kindly bought me a pound of my favorite blend for my birthday.  What a perfect way to start the new year!


















Ingredients
5 eggs
Spinach, chopped
Shallot, halved and sliced
Pecorino Romano
Olive oil

Butter
Alvarado Street Sprouted Whole Wheat bread

Preparation

Half and slice the shallot, chop the spinach and grate the cheese.  Put 3 whole eggs and two egg whites in a bowl and beat.  Some people add water or milk to the eggs, do whatever you like, I usually just keep it au natural.  Sautee the shallot with olive oil (or butter if you like) and add salt and fresh ground pepper.  Add the spinach.  Once the spinach is just wilted, transfer to a holding plate.  Pour the eggs into the pan and just as they are starting to set, add the shallots and spinach back in.   Scramble.  Add some grated cheese in close to the end then over the top once you have served them.  In the meantime, toast the bread.  Serve with room temp butter!
