Lemony Vegetable Succotash
When I see fresh peas at Trader Joe's I always buy them and I tend to make them this way... also, my dad told me I make too much dessert. So. Here are some veggies.
Lemony Vegetable Succotash
Ingredients
White onion
Garlic
Asparagus (baby if possible)
Broccoli rabe
Fresh peas
Spinach
olive oil
Lemon (juice and zest)
Salt and pepper to taste
Preparation
Mince a few cloves of garlic (depending on the quantity of veggies you have and how much you like garlic), chop the white onion and roughly chop (in large bite-able pieces) the asparagus and broccoli rabe.
Heat olive oil in large pan and add the onion and salt and pepper. Sautee 'til slightly brown.
Add garlic, asparagus and broccoli rabe. Sautee another 3 minutes.
Add the peas and a squeeze of fresh lemon juice. Let cook for another 3 minutes stirring to make sure you aren't browning anything.
Add the spinach, stir until wilted then zest the lemon over the top. Depending on how lemony you like it you can add more juice and as much zest as you want. For a pretty large plate of veggies I juice and zest half of a large lemon. Add salt and fresh pepper to taste. Serve! Keeps well for lunch the next day and can mix easily with pasta, quinoa... anything!
