Calamari Pasta, courtesy of my dadda

I made this with my dad when I was home for the holidays since we both love spaghetti and, with me, the odds are on his side in a vote for what's for dinner.  All for spaghetti say "Aye."  Aye!
Mediterranean Calamari Pasta
Ingredients
2 tablespoons olive oil
2 tablespoons garlic cloves, roasted
2 cups calamari
2 tablespoons capers
1 teaspoon cumin
1 teaspoon red pepper flakes
2 diced tomatoes, you can use any, but plum are recommended
1/2 cup white wine  
lemon juice (depending how much you like this could be a whole lemon or just a half.  I say whole)
2 tablespoons Italian parsley
salt

Preparation 
Boil water with a pinch of salt and some olive oil for pasta.  
In a hot saute pan add the oil, garlic and calamari.
Saute for 1 min then add the capers, cumin, red pepper flakes, and diced tomatoes. Cook for another minute.
Add the white wine and lemon juice and then simmer for 4 minutes.
Finish by adding the chopped parsley and salt.
Reduce until sauce thickens.
In the meantime, cook the pasta.  When both are done, throw the pasta in with the sauce (the Italian way) and make sure to mix it all together.  This way the pasta absorbs the flavor of the sauce.  Serve garnished with some extra parsley.  Slurp away!

  
As an aside, for those of you with a scrutinizing eye, I know you aren't supposed to put cheese on pasta with fish in it... but I like to walk on the edge. Plus this is calamari, not fish ;)
