This kale salad (made after having one at True Foods Kitchen, my mom's favorite restaurant, in LA) is actually really good, even for non-believers (tried and true by a couple of non-believers on whom I forced it). Plus it is very healthy and a good hearty salad that you can take to work without worrying about any wilting.
Ingredients
kale
grated Parmesan
bread, any kind, stale of fresh to toast and crumble over the top of the dressed salad
lemon
olive oil
garlic, crushed
red pepper flakes
salt
pepper
Preparation
If using baby kale, can serve as is (pictured in the post). If not, thinly slice the kale so that it is pleasantly spear-able and munchable in one bite.
Prepare dressing by mixing olive oil, lemon, salt, pepper, red pepper flakes and crushed garlic. Mix.
Dress the kale, then add as much parm as you like, the more the better. Add the bread crumbs and toss again. Enjoy with grilled chicken, salmon or something else equally spa- like.
